Your product line includes a variety of chocolates and confections. How did you come up with the idea for the different products such as bark, brittle, dipped cookies, and bite-sized chocolates? 

My creative process is often sparked by my surroundings—things I see, read, or even taste. It's a constant exploration of different flavors and textures.

When it comes to the bonbons, I keep a special book of flavor ideas. I am always looking for unique blends to uncover the beauty of complex flavors and textures. The creative journey is as varied as the chocolates themselves and each product is a reflection of the ongoing exploration and inspiration that defines our confectionery.

What are some of your customers' favorite products/ flavors? Do you have a favorite? 

For bonbons, our dark chocolate with salted caramel has been one of many highlights with our customers. Our flavors, such as the pumpkin seed brittle or peppermint bark, have been very popular and have allowed me to capture the spirit of our seasons.  

If I had to pick a personal favorite, it would be the PB&J bonbon.  The PB&J is encased in a milk chocolate shell and it harmonizes the perfect combination of raspberry jam and peanut butter filling. The flavor reminds me of the kid in me and the simplicity of having a PBJ in a single bite – minus the crust of course!  

Seasonal flavors like smores, key lime, maple syrup, and pumpkin add a unique touch to your offerings. How do you decide which seasonal flavors to introduce, and what is the creative process behind developing these flavors?

I strive to come up with flavors that not only capture the essence of the season but also bring something distinctive to our offerings. Being able to create unique combinations allows me to show my holiday spirit along with being able to show the wonders of flavor combinations.

Many creations stem from past experiences where I’ve been able to create ingredients that many would take for granted. For example, in the Smores' bonbon, one of my early forays into more "unique" flavors, I combined my homemade marshmallows and homemade graham crackers with milk chocolate until I found a combination that not only works well, but delivers that harmonious balance of flavors.

I try to channel my childhood appreciation for each season into offerings that are not just a treat for the taste buds, but also a delightful experience that reflects the essence of the season.

How has being a local confectioner impacted the community? Have you found that your local focus has influenced the way you create and market your products?

Establishing my local confectionery business has proven to be both rewarding and humbling. The enthusiastic response from our community has served as a tremendous inspiration. Witnessing customers evolve into "regulars" and receiving numerous positive reviews has affirmed that I am exactly where I aspire to be in my entrepreneurial journey.

Knowing my creations bring joy and delight to local residents has become a driving force in my creative process. The connection with the community has shaped not only the flavors and styles of my confections, but also the way I present and share them, ensuring that each product reflects the unique character and taste of our community.

Are there any community partnerships or collaborations that have played a role in the success of Andrew Logans Confections?

Community partnerships and collaborations have indeed been integral to our success. From the onset, I've embraced our local businesses. I wanted to share my discoveries locally and infuse some unique flavors into my bonbons. My vanilla bean ganache, one of my original flavors, features vanilla beans sourced from Husband & Wife Spices for Life, creating a delightful mix of flavors.

Another recent creation, the maple brown butter bonbon, highlights another market business.   Ackermann’s Farm in Vermont, whose pure maple syrup adds an authentic touch, was discovered during my early market experiences and utilized. This collaboration not only highlights the quality of local ingredients, but also fosters a sense of community spirit.

Catapult has played a crucial role in making my business possible.
