I am motivated by helping people with food intolerances or allergies enjoy desserts worry-free, both in the nutritional and taste sense. People with food allergies or intolerances deserve desserts so high-quality they can take them home, and their non-allergenic friends or family can enjoy them with the same indulgence. I wanted to make sure that everyone with or without food allergies could experience joy and satisfaction when eating dessert. We will always make desserts that are “free-from.” Adapting my mom’s recipe was a challenge; we had to work with different bakers to get the recipe just right because it’s all about making the recipe accommodating but great tasting too. We had to remove certain ingredients and replace them with others but with the goal of ensuring they tasted high-quality and delicious.

What intentional ingredients do you use in your desserts to ensure they taste amazing while remaining allergen-free? 

We select intentional ingredients like oat milk, natural cocoa, and vanilla flavoring to provide exquisite flavors and great textures. Our mini cupcakes are dairy-free, egg-free, and nut-free, and we continue to work on creating desserts that are “free-from” certain ingredients that do not suit people who need to enjoy allergen-free foods.

What are some of the most popular desserts you offer? Any personal favorites that you would recommend? 

Our two current flavors are Chocolate Delight and Vanilla Beanie, available at Chamberlin’s and Publix Greenwise. Vanilla Beanie is our most popular flavor because it is a classic with a delicious twist, as we use oat milk for a moist vanilla cake and a creamy swirl of frosting. I love strawberry-flavored desserts, and as a brand, we are working on launching more delicious tasting allergy-friendly desserts, but we definitely need all of your help to get there.

How do you ensure that your desserts maintain the same level of quality and taste as traditional baked goods? 

Through a combination of careful ingredient selection and international recipe development, we use alternative ingredients that can deliver the same or better taste than traditional baked goods. For instance, when you use oat milk creamer, you know your coffee will taste just as good as regular creamer.

Can you share some heartwarming stories or experiences of customers who have enjoyed your desserts despite having dietary issues? 

At several local events where we sample our cupcakes, customers share their gratitude for having dessert options that meet their dietary needs. We’ve had moms be thankful for their child with an egg or dairy allergy. We’ve had young teens thank us for having a vegan product option. One of the most recent customer experiences was at the Bonnet Springs Park event where we were sampling, and a mom and her daughter were so excited to meet us because our cupcakes were the only cupcakes they could eat because of the ingredients in them. It always makes me feel joy because I am not just sharing desserts to share but also having a positive impact on customers' lives.

How do you communicate the inclusive nature of your desserts and reach out to customers with dietary restrictions? 

We communicate the inclusive nature of our desserts by bringing everyone together to enjoy desserts that taste great but also meet different people’s needs and wants. Some people have a vegan nutritional lifestyle, and we are here to create desserts that honor that. Other people have dietary restrictions due to allergies or intolerances, and we create desserts that acknowledge that. For people who also enjoy dessert but avoid gluten or artificial food colorings, we are here for them too. We also want to be inclusive to those who may not even have those types of restrictions or nutritional lifestyles but simply want a better alternative to conventional cupcakes available in the stores.

Are there any plans for expanding your dessert offerings or introducing new flavors in the future?

It is part of our plan to expand our dessert offerings and introduce new flavors. We are working on creating different desserts like cookies, brownies, or cake slices that are also “free-from” certain ingredients that meet nutritional and high taste standards.

Can you provide some insights or tips for individuals who want to create allergen-free desserts at home? 

Don't feel overwhelmed if you want to make allergen-friendly desserts in your own kitchen. Nowadays, there are numerous alternative ingredients available to replace allergenic components. Just make sure to have a well-stocked pantry that includes essential items such as wheat flour substitutes, your preferred oil, non-dairy milk, egg replacers, flax seed, gluten-free flours, and high-quality pure vanilla bean extract are just some examples.
